How to soak almonds

  1. Put a handful of almonds in a bowl and cover with clean water.
  2. Leave for a few hours or overnight.
  3. Drain and rinse. The almonds will be softer; you can slip off the skins if you like.
  4. Eat them in the morning, or keep in the fridge and finish them soon.

Homemade almond milk

Soak the almonds overnight, drain, then blend with fresh water until smooth. Strain through a nut-milk bag or fine sieve. Add a date or a little honey if you’d like it sweeter. Keep it in the fridge and drink it within a few days.

Choosing a size

How to store them

Keep them in a tightly closed jar somewhere cool and dry. For longer storage, the fridge is best. Check the expiry date on the pack.

Quick recipe: your own spiced roasted almonds

  1. Heat a dry pan over low heat.
  2. Add raw almonds and keep stirring for a few minutes until fragrant.
  3. Take off the heat and toss with a pinch of salt and your choice of spice (chilli powder or cumin, for example).
  4. Cool completely before storing in an airtight jar.
