Dried lime, or loomi, is lime dried right through until it turns dark. It is supplied as whole dried limes, as shown in the photo.
A standard ingredient in Gulf and Arab cooking: added whole or pierced to kabsa, mandi, machboos, soups and stews for a distinctive sour note, or simmered for drinks. Suits Arab restaurants, caterers for weddings and events, and grocers.
